Peel off the pumpkin skins and cut it into small cubes. Add some coconut milk and IMPACT FARM chili paste to a pot on medium heat and saute until softened. Add pork, pumpkin cubes, and the remaining coconut milk into the mixture.
Cook the chicken in a large pot until cooked through and then add some coconut milk and IMPACT FARM chili paste. Stir well to combine. Cover the pot and bring to a simmer. Reduce the heat and wait until the pumpkin is soft and cooked. Make sure the pumpkin is not too soft or else it will break up. Taste and adjust seasoning with fish sauce and sugar until it is balanced enough for your tastes. Garnish it with red chili pepper, basil leaves, and kaffir lime leaves. A side of jasmine rice will make the perfect companion.
