Green curry is a staple in Thai cuisine known for its powerful flavor. Popular around the world, it’s usually accompanied by herbs, lemongrass, basil leaves, fresh chili, garlic, red onion, and galangal and high in protein, fat, and fiber.
Fresh coconut and homemade curry paste are the forefront of this popular dish. Beef, Pork, white meat chicken, or fish ball usually accompany the dish. Fish sauce, palm sugar, kaffir lime leaves, red chili pepper, basil leaves, eggplant, pea eggplant, and young coconut meat are the main ingredients.
Saute the IMPACT Farm curry paste over medium-high heat until softened and then add the coconut milk and simmer until the oil starts to separate. Add the chicken and stir into the paste. Add the remaining coconut milk while stirring. Once cooked through, add pea eggplant, eggplant, young coconut meat, red chili pepper, and kaffir lime leaves. Taste and adjust seasoning with fish sauce and sugar until it is balanced enough for your tastes. Serve over rice or rice noodles.
